Recently, numerous scientific evidences for the determinents effecting health status come from several studies, i.e., epidemiological studies, retrospective and prospective dietary studies, animal studies, and biochemical and physiological studies. However, it is difficult to make valid conclusions. Undernutrition, the basic subject in nutrition, has been probably the serious nutritional issue in a part of the world, while in the other part of the world, overnutrition is brought forward as a new nutritional problem associated with chronic diseases. The nutritional sciences have been differentiated and developed in accordance with prerequisite factors of the socioculturaI and economic conditions of the nation. Especially, there is an indissoluble connection between nutrition and dietary culture in the nation. Therefore, the relation of nutrition and food science becomes more rigorous. In conclusion, further research of nutrition based on our specific conditions is expected in the near future.
