Recently. industrialization of Korean traditional beverages has taken off. Last year, rice nectar(Shikhye), one of the most successful items. sold about 250 billion won in the market as a single item. Other Korean teas, such as sweet cinnamon punch and dried cereal powders were consumed as either powdered form or liquid form in many types of containers. Since industrialization of traditional beverages has great room for being developed in comparison to other industrialized products, there is big possibility to develop and launch more commercialized traditional beverages. In the literatures, we could find 193 names of traditional beverages and most of those items could be rearranged as modern products. Industrialization of beverages is based on plant scale mass production, quality assurance, and supplying to consumers. For industrialization, first of all, traditional beverages should be carefully categorized to find possible hit products and then, detail information for traditional taste, and manufacturing methods should be collected. The method of production would be carefully set based upon the traditional method. In this case, modern and traditional taste should be compatibility harmonized. Also, industrialization required a large scale production line, and a distribution system of commercial products. It is true that not only traditional beverages but also traditional foods have less developed and shared small portion of market volume than these of western food industries. Traditional foods are one of the most essential heritages in our life. Therefore, traditional beverages can be world-wide products, if there are well understood and collaborated with modern food technology and marketing skills.
